Recipe: Cream of Mushroom Soup

While already a popular soup, the Cream of Mushroom soup at Sweet Tomatoes and Souplantation was so delicious, and it paired perfectly with their Cheesy Garlic Focaccia Bread or Wildly Blue Blueberry Muffins.

At one point, the soup was only available on “Mushroom Mondays” and/or the first week of each month, but they eventually added it to the daily menu due to overwhelming customer demand.

The restaurant never released an official recipe, but this copycat inspired by Dailymom.com tastes very similar, is easy to make, and is 10000% better than anything you’d buy in a can.

You can use whatever type of mushrooms you prefer, including white or baby bella mushrooms that come in an 8 ounce package at the grocery store.

This does freeze fairly well if you wish to make a larger batch.

Ingredients

Yields approximately 1/2 gallon.

  • 5 cups sliced mushrooms (approx. two 8oz. packages)
  • 1 cup chopped celery
  • 1/4 teaspoon white pepper (can use black pepper too)
  • 4 tablespoons olive oil
  • 3 tablespoons butter
  • 5 tablespoons flour
  • 1 chicken bouillon cube (or 1 tablespoon chicken base)
  • 1 beef bouillon cube (or 1 tablespoon beef base)
  • 1 cup whole milk
  • 1 cup half and half
  • 3 1/2 cups water
  • Salt and pepper to taste

Directions

  • In a pot, sauté mushrooms, celery, olive oil, and pepper together for 15 minutes. Then transfer all ingredients (and any juices) to a separate bowl and set aside for later.
  • In the same pot on medium heat, melt butter and whisk in flour to create a thick paste/roux. Continue whisking together for five minutes.
  • Add water and bouillon cubes and bring to a boil. Let simmer for 15 minutes to thicken.
  • Add whole milk, half and half, and the sautéed mushrooms and celery from earlier.
  • Season with salt and pepper to taste.
  • Simmer until desired thickness
