Recipe: Sweet Orange & Cranberry Muffin
The Sweet Orange & Cranberry Muffin was part of the Souplantation and Sweet Tomatoes “Winter Delights” menu.
The following is an official Souplantation-provided recipe.
Makes approximately two dozen regular-sized muffins.
Ingredients
Dry Ingredients
- 3 1/4 cup white flour
- 2/3 cup wheat flour
- 1 1/2 tbsp baking powder
- 1 tsp salt
Wet Ingredients
- 1 1/4 cup sugar
- 1 1/2 cup buttermilk
- 3/4 cup canola oil
- 1/3 cup cracked eggs
- 3 tbsp orange juice concentrate
- 2 tbsp orange zest finely minced
Mixing Ingredients
- 1 1/2 c whole cranberries in sauce
- Wet Mix
- Dry Mix
Sugar Topping
- 3/4 cup brown sugar
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 325 degrees. Spray muffin pan with non-stick spray.
- Combine dry ingredients in bowl and mix until thoroughly combined.
- Combine wet ingredients in large bowl and mix until sugar is dissolved.
- Combine cranberry sauce, dry ingredients, and wet ingredients.
- Scoop batter into muffin pan with 2-oz scoop. Top with 1 tsp sugar topping.
- Bake for 15 minutes.
