Recipe: Sweet Orange & Cranberry Muffin

The Sweet Orange & Cranberry Muffin was part of the Souplantation and Sweet Tomatoes “Winter Delights” menu.

The following is an official Souplantation-provided recipe.

Makes approximately two dozen regular-sized muffins.

Ingredients

Dry Ingredients

  • 3 1/4 cup white flour
  • 2/3 cup wheat flour
  • 1 1/2 tbsp baking powder
  • 1 tsp salt

Wet Ingredients

  • 1 1/4 cup sugar
  • 1 1/2 cup buttermilk
  • 3/4 cup canola oil
  • 1/3 cup cracked eggs
  • 3 tbsp orange juice concentrate
  • 2 tbsp orange zest finely minced

Mixing Ingredients

  • 1 1/2 c whole cranberries in sauce
  • Wet Mix
  • Dry Mix

Sugar Topping

  • 3/4 cup brown sugar
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 325 degrees. Spray muffin pan with non-stick spray.
  2. Combine dry ingredients in bowl and mix until thoroughly combined.
  3. Combine wet ingredients in large bowl and mix until sugar is dissolved.
  4. Combine cranberry sauce, dry ingredients, and wet ingredients.
  5. Scoop batter into muffin pan with 2-oz scoop. Top with 1 tsp sugar topping.
  6. Bake for 15 minutes.
